HARLINGEN, Texas (ValleyCentral) — Marcia Trujillo, owner of Big Bites Bakery, discussed her journey from making pozole for family and friends to selling it.
Trujillo uses a blend of chilies, onion, garlic, salt, and pepper, boiling the chilies with meat for three to four hours.
Trujillo said about her company, "We started as a cookie company, and we started going into dulces enchilados. Since I am the person who makes pozole for my jobs and my family and friends, my family told me, 'Why don't you just start selling it?' I didn't want to monetize on it, because it's too good to do that, but people would pay me, so we started doing that, and it's become a hit."
Her pozole recipe is naturally spicy and can be customized to taste. Trujillo said she has been making pozole for 10 to 15 years, perfecting the recipe with her father's guidance.
For those not familiar with pozole, Trujillo describes it as a hominy stew, available in various forms, including vegan.
Big Bites Bakery started during the COVID-19 pandemic. In addition to pozole, the bakery offers cookies, dulces enchilados, and caters across the Rio Grande Valley.
Trujillo said she has plans to expand to storefronts.
