Roma set to open first food truck park in Starr County

ROMA, Texas (ValleyCentral) — The City of Roma is making renovations to one of its beloved recreational spots.

The Guadalupe Plaza has been under construction with plans to open the first food truck park in Roma and in Starr County.

New LED light fixtures were turned on at the Guadalupe Plaza Wednesday evening as a step forward in the renovation project.

City officials say the Guadalupe Plaza Project is in its early stages with plans to soon feature updated concrete work, landscape, shaded perogolas, seating areas and a stage.

"It's all about modernizing it and giving it more of an everyday use in the near future," Alfonso Ramirez, Assistant City Manager of Roma said. "The point here is to give to the community a place to go for recreation and to allow for opportunites."

The City of Roma first broke ground on the Guadalupe Plaza renovation project in April 2023 and is now nearing towards the end of its first stage.

"We going in stages. The first stage is to finish up the plaza. And then after that, we're going to evaluate how much it costs to connect the utility services and all that," Ramirez said. "Then we'll have a timeline for the completion including the food truck park."

No official date has yet been announced for the grand opening of the renovated plaza.
