Meat market owner confesses premonition about Food Patrol visit

McALLEN, Texas (ValleyCentral) — This week the Food Patrol made dreams a reality for one business owner.

"You're not going to believe this, but I had a dream that this was going to happen last night," said Pablo Gonzalez, owner of La Herradura Meat Market as he saw CBS4 anchor Derick Garcia walk through the door with his camera crew.

Whether it's a dream or a nightmare, the Food Patrol is stopping by a market with two inspection reports just days apart.

Here's what's que rico and what's que asco in this week's Food 4 Thought.

The Food Patrol surprised the Costa Mesa crew, located at 4013 W Expressway 83 in McAllen with a top performer sticker.

Manager Fernando Garza knew what was going on when he saw the cameras coming through the door.

And bartender Veronica Vega knew who we were right when she spotted us.

"I saw you guys and I'm like 'Oh my god that's Derick Garcia,'" Vega said.

We're all smiling ear to ear because we love our jobs.

"I love what I do I love the people I love my coworkers it's just a friendly environment," Vega said.

And the environment, has the scent of fresh cocktails and delicious dishes, add a top performer sticker to the upscale décor.

That's que rico!

But it's que asco time!

And the Food Patrol is headed to La Herradura Meat Market, located at 4711 South Alamo Road in Edinburg.

With two Hidalgo County health inspection reports on March 11, they had 18 violations:

-for uncovered foods

-missing labels and dates on food

-grease and rust on equipment

-and a small roach was in restroom door

The clock was ticking for the meat market. The inspector gave them four days to get clean and get pest control.

On March 15, they were re-inspected and authorities found four violations for employees not being certified to handle food and minor issue of the floors.

A significant improvement from the three dozen violations.

But old habits can die hard.

The Food Patrol was looking for owner Pablo Gonzalez to see the proof of pest paperwork because where there is one roach, there could be more.

Pablo had all the proof, quickly heading to the office and pulling every document a health inspector would ask for.

Pablo is taking the accountability a step further and walking us over to the grease free equipment. But before we could check it out, Pablo made a confession, about a premonition.

"You're not going to believe this but I had a dream that this was going to happen last night," he said. "I swear to god."

It's a hard lesson for some owners to get a less than positive inspection report.

Some take the score to heart, like Pablo who made the corrections and when the Food Patrol came in, he was welcoming, honest and most importantly recognized the responsibilities of ownership and to keep it clean.
